I just returned from a trip to the Asian market with a friend and I’m intoxicated by the smell of the ripe mangoes on my counter. My friend is originally from Thailand so it was so great to shop with her, she introduced me to so many new greens. Just look at all the amazing stuff I got.
As soon as I got home I quenched my thirst with some fresh coconut water. I’ll use the coconut meat for a pudding later.
I don’t know the names of all these greens, because my friend couldn’t tell me some of them in English. I do know they all taste good. My favorites were the Thai cilantro and the snow pea leaves. I also got a case of mangoes in various stages of ripeness.
I decided to make a large breakfast salad inspired by Lisa’s mango salad recipe.
For my impromptu salad I used:
1 head of butter lettuce
1 ripe mango cubed
1/4 cup each of mint leaves, Thai cilantro and snow pea leaves
For the dressing:
3 Tbsp apple cider vinegar
2 Tbsp of olive oil
1/2 a serrano pepper chopped
Pinch of sea salt
I massaged the dressing into the greens and the mango chunks, then squeezed the lime on top.
This salad is a winner, I think I’ll make it for my dinner party this Saturday night. In other news I’ll be doing the 11 week initiative with my friends over at Raw Food Rehab. Basically what we will be doing is setting our health goals, creating a plan to achieve these goals and hopefully by the end of the 11 weeks succeed.
Here are my goals:
- Eat 100% raw for 30 days
- Sweat daily (sometimes I walk for my exercise and I don’t really sweat)
- Plan my meals for the week, every week
- Create a recipe binder filled with recipes I love
- Work on proper food combining (stop eating fats with fruits, my body doesn’t like the combination)
Pretty fun right? I’m happy with my weight so I don’t really care if lose any or not I just want to take better care of myself. So if you want to join me sign up today because it starts tomorrow! Some days were easy while others were not, but I got through it and I made some great changes as a result of it. I now dry brush my skin every morning, drink a liter of water with lemon every morning and I wash my face with honey instead of my old cleanser that was loaded with chemicals. I’m looking forward to doing the 11 week initiative and eating all the fresh produce I got from the Asian market today.
