A few days ago I was reading one of my favorite raw food blogs, Rawmazing, and I picked up a great tip. It’s so easy to get into a food rut, especially when we are busy, but sometimes making simple changes can make a big difference. The tip is to marinate your vegetables and put them in the dehydrator. So simple, but it really changes the flavor and the texture, without cooking the vegetables.
I decided to try it out; I chopped up some Napa cabbage, red cabbage and broccoli. I made a very simple marinade with olive oil, lemon, my favorite white miso, garlic and just a small splash of wheat free tamari. I did this in the morning right after I dropped my son off to school and put it in my dehydrator and went on with my day. By lunchtime I was treated to a slightly warmed very flavorful bowl of veggies.
The texture was amazing, slightly softened but still very crunchy. This is one dish that I will be sure to make for my foodie friends.

wow! that looks amazing. i thought dehydrators made food dry but this looks moist and yummy!! great idea. my 16 month old would even try it
Dehydrators are great for drying food, but if you put vegetables in for a few hours they become slightly soft and warm. They really soak up the flavor of the marinade.
